Margarita Kay Party

    The Margarita/Mary Kay party was a big success.  As promised, here are the recipes for the snacks and the margaritas!



    Margarita Cake (adapted):
    10.5 oz. white cake mix
    3.4 oz. instant vanilla pudding
    4 eggs
    1/2 c. oil
    2/3 c. orange juice
    1/4 c. fresh lime juice
    1/4 c. tequila

    Glaze x2:
    1 c. powdered sugar
    1 T. tequila
    2 T. fresh lime juice
    grated lime peel

    Preheat oven to 350.  Grease and flour a 10 inch Bundt pan.  Combine cake mix, pudding, eggs, oil, OJ, lime juice, and tequila.  Beat for 2 minutes.  Bake for 45-50 minutes.

    Prepare 1 batch of glaze.  Remove the cake from the oven.  Using a long skewer, poke holes in the hot cake, and pour glaze over the cake while still in the pan.

    Cool for 10-15 minutes and flip onto a plate.  Prepare another batch of glaze.  Pour over warm cake.

    The cake wasn't especially pretty, but it tasted fantastic!!!  Got lots of requests for the recipe for this one.  I didn't make the second glaze thick enough so it ran down the cake onto the plate.  :P  I just spooned more of it over each piece of the cake as I cut it.






    Cowboy Caviar (adapted):
    15.5 oz. can black beans, drained
    15.5 oz can pinto beans, drained
    14.5 oz can diced tomatoes, drained
     2 cups frozen corn kernels, thawed
     1/2 medium onion, chopped
     1/4 cup frozen chopped green bell pepper
     1/2 cup chopped pickled jalapeno peppers
     1/2 teaspoon minced garlic
    1 cup Italian salad dressing

    Mix it all up real good-like.

    This makes a GIANT batch!  It's a good thing my girlfriends and I are having a beginning of hunting season, girls-only sleepover this weekend.  Bring on the sweatpants and snacks!



    Jalapeno Dip (adapted):
    24 oz. container sour cream
    1 oz. package ranch dressing mix
    12 oz. jar pickled jalapeno pepper slices
    1 bunch cilantro

    Mix the ranch dressing mix into the sour cream.  Finely chop the jalapenos and fold them into the sour cream mixture.  I accidentally forgot the cilantro because I accidentally hate cilantro.

    This is really good, but super spicy!  If you aren't a big fan of lots of heat, cut down the amount of the jalapenos that you use.





    New Allison's Mambo Margaritas (from "The Sweet Potato Queens Book of Love"):
    12 oz. tequila
    12 oz. lemon-lime pop
    12 oz. Mexican beer, like Corona
    12 oz. frozen limeade concentrate

    Mix it all together in a pitcher and call a designated driver.

    I know, I know.  It sounds weird, but it is soooooooo good.  Try it.  Seriously.  Just don't try to make a blended version because the carbonation in the beer and pop will make a giant mess of wasted booze all over your kitchen.
